If you’ve scrolled down this far (and I hope you have), you’ve reached this, my very first post.
So, your reward is the following recipe:
Not Quite Homemade Cookies
Take a package of chocolate cake mix (doesn’t matter which brand, really) and pour it into a bowl. Then, in another bowl, mix 1/3 cup of peanut oil, a tablespoon of vanilla, and 2 beaten eggs. Slowly the cake mix and stir it up. Finally, mix in a bag of chocolate chips.
Put it in the refrigerator for a half an hour. Drop the dough by tablespoonfuls onto an ungreased cookie sheet with parchment paper on it.
It goes 350 degree oven for a little over 10 minutes.
Cool them on a rack & enjoy.
I got this recipe years ago from a former colleague of mine. It basically substitutes the cake mix for the flour & sweetened shortening in a scratch recipe. A simple idea, and an effective one, as you’ll discover.
